The Recipe for Mike's Blackeye Pea Soup

  

3 cans of Bush's blackeye peas – plain, you won’t need the bacon and seasonings.

 

14 oz package of smoked sausage or polska kielbasa – in bite sized chunks

 

1 onion – very thinly sliced

 

1 jalapeno – diced after the seeds are cleaned out

 

1 teaspoon minced garlic

 

¼ cup cooking oil

 

¼ cup apple cider vinegar

 

¼ cup sugar

 

Throw it all in a crock pot for the day on medium setting, and then serve with corn bread (add a little creamed corn) or with the flaky biscuits.

 

Makes 4-5 servings.
